Chicken simon & garfunkle

2 | eaches | Whole chicken breasts split in 4 pieces |
½ | cup | Butter |
1 | each | Egg, beaten |
1 | cup | Bread crumbs, unflavored |
1½ | teaspoon | Parsley |

½ | teaspoon | Sage |
½ | teaspoon | Rosemary |
½ | teaspoon | Thyme |
½ | cup | White wine, dry |
Flour | ||
Mozzarella cheese, shredded |
Directions
Pound out chicken breasts. Melt butter and add seasonings and salt and pepper to taste. Set aside. Sprinkle Mozzarella cheese on chicken, roll up and secure with toothpicks. Dip in flour, then in egg, then in bread crumbs. Arrange chicken in pan. Pour sauce over the chicken.
Bake at 350 degF for 30 minutes. Pour white wine over chicken. Bake for 30 minutes more.
