Chimichurri (argentine spiced parsley sauce)

¼ | cup | Red wine vinegar |
½ | cup | Onions; finely chopped |
1 | teaspoon | Garlic; finely chopped |
¼ | cup | Fresh parsley; finely choppe |
1 | teaspoon | Dried oregano |
¼ | teaspoon | Cayenne pepper |
1½ | teaspoon | Salt |
1 | teaspoon | Black pepper; freshly ground |
Directions
In a bowl, combine the oil and vinegar, and beat them together with a whi or fork. Stir in the onions, garlic, parsley, oregano, Cayenne, salt and black pepper, and taste for seasoning. To develop its flavor, let the sauc stand at room temperature for 2 or 3 hours before serving. Chimichurri is a traditional sauce for grilled and roasted meats.
