Ingredients

1 Onion; roughly chopped
1 Green pepper; seeded and roughly
; chopped
1 Tomato; roughly chopped
2 tablespoons Fresh parsley leaves
2 Garlic cloves; roughly chopped
5 tablespoons White wine vinegar
2 tablespoons Olive oil
Salt and freshly ground black pepper

Directions

1 Place the onion, green pepper, tomato, parsley and garlic in a liquidizer or food processor and whiz until finely chopped.

2 Add the vinegar and oil, whiz again and season to taste. Before serving, chill for an hour or so.
