Chinese chicken salad

1 | Reserved Peking Chicken | |
5 | Scallions, white part only thinly sliced | |
½ | Red bell pepper -- sliced | |
2 | cups | Reserved Stir Fried Broccoli with Garlic |
1 | tablespoon | Honey |
3 | tablespoons | Rice vinegar |
1½ | tablespoon | Dark sesame oil |
1½ | tablespoon | Soy sauce, low sodium |
¾ | teaspoon | Hot pepper sauce |
1½ | tablespoon | Peanut oil |
Directions
Cut the reserved chicken into 1" chunks. You should have about 5 cups. Place in a microwave dish, cover with plastic, and warm in microwave at full power for 2 minutes. Meanwhile toss the scallions, bell pepper and reserved broccoli in a large salad bowl. Mix the honey , vinegar, sesame oil, soy sauce, hot pepper sauce, and peanut oil in a small bowl. Toss the chicken and vegetables with the dressing and serve.
