Chinese chicken salad

Ingredients

Quantity Ingredient
1 Reserved Peking Chicken
5 Scallions, white part only thinly sliced
½ Red bell pepper -- sliced
2 cups Reserved Stir Fried Broccoli with Garlic
1 tablespoon Honey
3 tablespoons Rice vinegar
tablespoon Dark sesame oil
tablespoon Soy sauce, low sodium
¾ teaspoon Hot pepper sauce
tablespoon Peanut oil

Directions

Cut the reserved chicken into 1" chunks. You should have about 5 cups. Place in a microwave dish, cover with plastic, and warm in microwave at full power for 2 minutes. Meanwhile toss the scallions, bell pepper and reserved broccoli in a large salad bowl. Mix the honey , vinegar, sesame oil, soy sauce, hot pepper sauce, and peanut oil in a small bowl. Toss the chicken and vegetables with the dressing and serve.
