In a medium saucepan, heat brown sugar, butter, and cream over medium heat, stirring often, until butter is melted. Cook for 2 mins, stirring constantly. Pour over cornflake mixture and mix gently to combine. Press mixture into a buttered 8-cup ring mold. Refrigerate 4 hours, or until firm.
2. To serve, unmold and fill center with scoops of ice cream. Cut cornflake ring into slices and top with scoops of ice cream. Pass bowls of warm butterscotch and chocolate sauce on the side.
