Choux fritters

Ingredients

Quantity Ingredient
½ cup Butter or margarine
1 cup Boiling water
¼ teaspoon Salt
cup Flour
4 Eggs
4 cups Vegetable oil; (12 oz)
Granulated sugar

Directions

Combine butter, boiling water, salt, and flour in a saucepan over moderate heat. Beat mixture vigorously until it leaves sides of pan and forms a ball. Remove from heat and cool slightly. Spoon into a mixer or food processor with a steel blade, and add eggs one at a time, beating well after each addition. When all eggs have been added and mixture is thick, it should hold its shape when lifted with a spoon.

Heat oil to 375°F. Dip a tablespoon first in hot oil, then in batter.

Carefully drop tablespoonfuls of batter into hot oil and cook until brown on all sides. Remove from oil with a slotted spoon and drain on paper towels.

Sprinkle with sugar and serve hot.
