Christmas coffee cake

Ingredients

Quantity Ingredient
2 Extra-ripe small bananas; peeled
2 cups Buttermilk baking mix
2 tablespoons Sugar
½ teaspoon Ground cinnamon
¼ teaspoon Ground allspice
1 Egg
1 teaspoon Vanilla extract
1 cup Whole berry cranberry sauce
½ cup Brown sugar
½ cup Pecans
2 tablespoons Melted butter or margarine
2 tablespoons Granulated sugar

Directions

TOPPING

Place bananas in blender (⅔ cup). Combine baking mix, sugar, cinnamon and allspice. Beat in pureed bananas, egg and vanilla. Turn batter into a well greased 9-inch square pan. Break up cranberry sauce. Spoon evenly over batter. Sprinkle with topping. Bake in 400 degrees oven for 25 minutes or until cake tests done.

Topping For Christmas Morning Coffee Cake: Combine ½ cup packed brown sugar, ½ cup chopped pecans, 2 tablespoons melted butter and 2 tablespoons sugar.
