1 Stick margarine or butter
2 Stalks celery; diced (about 1 1/2 cups)
1 small Onion; diced (about 1 cup)
teaspoon Thyme
½ cup Flour
3 cups Milk
½ teaspoon Clam base or clam juice
2 cups Chopped clams with juice
Salt
White pepper

I have two Cooking with Mickey cookbooks, they have a lot of the most requested recipes from both the CA and FL parks. Volume 1 lists a New England Clam Chowder from the Liberty Tree Tavern in Liberty Square in the Magic Kingdom. There is also in Volume 2 a richer version served at the 50's Prime Time cafe at Disney MGM. Here are them both.

But FIRST, a disclaimer/ad for Disney so they don't sue. Personally I love these two cookbooks and use them all the time. Their bread pudding with lemon sauce has become a staple at our family reunions now.

Melt margarine or butter in a 4 quart sacue pot. Add celery and onion ans saute 3 to 5 minutes. Add thyme and continue to saute another 1 to 2 minutes. Addd flour and mix well, cooking for 3 to 5 minutes to form a roux. Slowly add milk and bring mixture to a boil. Stir constantly to prevent burning. Add clam base and chopped clams and season with salt and pepper to taste.
