2 | larges | Egg whites, room temperature |
½ | cup | Sugar |
2 | tablespoons | Unsweetened cocoa powder |
1 | teaspoon | Vanilla extract |
½ | teaspoon | Peppermint extract |
Directions
Preheat oven to 250'F. Line two baking sheets with parchment paper. In small bowl, using electric mixer on high speed, beat egg whites until foamy. One tablespoon at a time. Beat in six tablespoons sugar; each spoonful of sugar should be completely dissolved and incorporated before next addition. Continue beating until soft peaks form when beaters are lifted. In cup, stir cocoa powder with remaining two tablespoons sugar. One tablespoon at a time, beat mixture into batter. Add vanilla and peppermint extracts and beat until shiny and stiff peaks form when beaters are lifted. Drop batter by heaping teaspoons onto prepared baking sheets and bake for 45 minutes or until kisses are firm on outside. Carefully transfer kisses to rack to cool completely; store in airtight container.
