Cochiti green chile stew

2 | pounds | Lean chuck; cut in small cubes |
2 | tablespoons | Oil |
½ | medium | Onion; chopped |
4 | mediums | Potatoes; peeled and diced |
4 | mediums | Zucchini squash; chopped |
12 | larges | Green chiles; roasted and peeled |
1 | teaspoon | Garlic salt |
1 | teaspoon | Salt |
1 | cup | Water |

Brown the chuck in a little oil in a large deep pan. Add the onions, saute 3-5 minutes. Add the potatoes. When the ingredients have browned pour off any oil. Add the zucchini, if used, the chiles cut up, garlic salt, salt and water. Bring to a boil and simmer for at least ½ hour. Stew should be eaten with a spoon like a hearty sooup.
