Cochiti green chile stew

Ingredients

Quantity Ingredient
2 pounds Lean chuck; cut in small cubes
2 tablespoons Oil
½ medium Onion; chopped
4 mediums Potatoes; peeled and diced
4 mediums Zucchini squash; chopped
12 larges Green chiles; roasted and peeled
1 teaspoon Garlic salt
1 teaspoon Salt
1 cup Water

Brown the chuck in a little oil in a large deep pan. Add the onions, saute 3-5 minutes. Add the potatoes. When the ingredients have browned pour off any oil. Add the zucchini, if used, the chiles cut up, garlic salt, salt and water. Bring to a boil and simmer for at least ½ hour. Stew should be eaten with a spoon like a hearty sooup.
