Directions
Make stock by putting an old fowl to boil in three quarts of water.
Add salt and skim as meccessary and cook steadily for about an hour and a half.Frain off stock.Return this to pan with medium size leeks,cut into 1 inch lengths and add to stock with pepper and washed rice.Add more salt if required and boil for one hour longer.
