Coconut-pineapple bars

Ingredients

½ | cup | Margarine -- not diet |
¾ | cup | Sugar |
1¼ | cup | All-purpose flour |
1¼ | pounds | Crushed pineapple |
1 | large | Egg |
1 | tablespoon | Margarine |
½ | teaspoon | Vanilla extract |
3½ | ounce | Dried coconut |
Directions
1. Combine ½ cup softened margarine and ¼ cup sugar in a small bowl. Beat with an electric mixer set on medium speed until mixture is light and fluffy. Gradually beat in flour to form a soft dough. 2.
Press dough evenly on bottom and ½ inch up sides of 9 x 9 x 1-¾ inch ungreased pan. Bake in preheated 350-degree oven for 15 minutes or until golden brown. Let cool. 3. Drain pineapple VERY thoroughly.
Spread pineapple over crust. 4. Add rest of sugar to egg; beat until just blended. Add 1 tablespoon melted margarine, vanilla and coconut.
Spread mixture over pineapple. Bake 20 minutes longer, or until top is golden brown. Cool, then cut into 1-½ inch squares.
Yield: about 3 dozen.
