Creole corn

Ingredients

2 | slices | Bacon |
1 | large | Onion; sliced, |
Separated into rings | ||
1 | medium | Green pepper; chopped finely |
2½ | cup | Chopped fresh tomatoes |
1 | small | Bay leaf |
2 | cups | Corn; cut from cob |
¼ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
Directions
Fry bacon until crisp. Remove from skillet, reserving drippings. Drain bacon & crumble. Add onion & pepper to drippings in skillet. Cook over medium heat, stirring constantly, until crisp-tender. Add tomatoes & bay leaf to onion mixture. Simmer 10 minutes, stirring occasionally. Stir in corn & simmer 10 minutes. Discar bay leaf. Stir in salt, pepper & bacon.
Yields 6-8 servings. (Great way to use up extra tomatoes & fresh corn.) JOHNNIE CARNATHAN
