2 | Onions, peeled and chopped. | |
1 | small | Courgette, sliced. |
1 | Capsicum, green deseeded and sliced. | |
1 | Garlic cloves, or two, crushed. | |
1 | pinch | Mixed herbs |
Salt | ||
Black pepper, freshly ground. | ||
½ | cup | Cheese, cheddar, low-fat, grated. |

Directions
Put all the ingredients except the cheese in a saucepan and simmer for 10 minutes, seasoning to taste with salt and freshly ground black pepper.
Fill the pancakes with the ratatouille- putting 2-3 tbs of it in the middle of each pancake- then roll them up and put them in an ovenproof dish.
Sprinkle the cheese over them and bake for 10 minutes ay 350^F/180^C.
