Date and rice lunch box salad

Ingredients

Quantity Ingredient
3 cups Cooked white and wild rice Mix
1 medium Tart green apple; cored And chopped
1 cup Cooked ham; diced
1 cup Sliced celery
cup Chopped dates
½ cup Red onion; finely chopped
½ cup Olive oil; extra light
¼ cup Fresh orange juice
¼ cup Red wine vinegar
Salt and pepper; to taste

Directions

ORANGE DRESSING

Dice 4 ounces of cooked ham to make about 1 cup.

Dressing: Whisk together all the ingredients untill well combined.

Salad: Combine all ingredients for the salad and toss to mix. Add the dressing and toss to coat. Chill 2 to 3 hrs. before serving.
