Drop doughnut holes

Ingredients

2 | Eggs | |
⅓ | cup | Sugar |
1 | teaspoon | Salt |
2 | tablespoons | Melted margarine |
Or cooking oil | ||
1⅔ | cup | Flour |
3 | teaspoons | Baking powder |
⅓ | cup | Milk |
¼ | teaspoon | Lemon extract |
¼ | teaspoon | Nutmeg |
Directions
Beat eggs until light; add sugar, salt, oil, extract, and nutmeg and mix well.
Mix flour with baking powder; add alternatively with milk to egg mixture. Drop by ½ teaspoonsful into deep hot oil and fry about 2-½ minutes, or until brown. Doughnut will rise to the surface, so continue submerging them to assure even cooking.
Drain on paper towels. Shake with sugar in a bag.
Makes about 50.
