3 cups All-purpose flour
1 cup Buttermilk
teaspoon Baking powder
2 teaspoons Vanilla extract
Cooking oil for deep frying
1 teaspoon Grated lemon or orange peel (optional)
Honey
Cinnamon

Date: Sat, 24 Feb 1996 15:22:38 -0500 From: theservs@... (Thomas E. Haug) Beat eggs; stir in buttermilk, vanilla extract, and grated peel. Combine flour and baking powder. Stir into the egg mixture. Cover with a cloth. Let stand at room temperature for 1 hour. In a deep fryer, heat oil to 375 F.

Drop batter by the tablespoon. Cook 4 minutes, or until doughnuts are golden brown. Drain on paper towels. Drizzle with honey and sprinkle with cinnamon. Serve hot. ABOUT 30 DOUGHNUTS.

Note: Batter keeps well in the refrigerator. Bring to room temperature before cooking.
