Duck kielbasa

Ingredients

Quantity Ingredient
4 Feet small hog casings
4 pounds Domestic duck
2 teaspoons Salt, or to taste
2 teaspoons Black pepper
4 cloves Very finely minced garlic
1 teaspoon Marjoram
1 teaspoon Summer savory
½ teaspoon Allspice
1 tablespoon Sweet paprika

Directions

Prepare casings. Grind duck through the fine disk; combine with remaining ingredients and grind again. Stuff casings and twist off into 3-4" links. Saute in oil until evenly browned and cooked through.
