Enchilada's fantastic

Ingredients

1 | pounds | Ground turkey |
2 | cups | Picante sauce |
10 | ounces | Spinach; thawed and drained |
2 | teaspoons | Cumin |
½ | teaspoon | Salt |
8 | ounces | Cream cheese |
14 | ounces | Diced tomatoes |
12 | Flour tortillas | |
1 | cup | Shredded cheese |
Directions
Cook turkey. Add 1 cup of sauce, 1½ t. cumin and salt. Cook and stir 5 minutes until most of the liquid evaporates. Add cream cheese and stir until it melts. Fill tortillas, roll and place in a slightly greased casserole dish, seam side down. Combine the rest of picante sauce, cumin and tomatoes. Pour over the top. Bake at 350 for 20 minutues, then top with cheese and melt.
I got this recipe from a fantastic fund raising cookbook. I don't use spinach in mine. I use fat-free or light cream cheese because you can't taste the difference. I don't use the spices in the recipe, I use my own, to make it spicer. I hope you like it, I also spray the pan with Pam.
