8 | ounces | Tomato Sauce |
1 | pack | Enchilada Sauce Mix |
1½ | cup | Water |
8 | ounces | Cheddar Cheese, grated |
8 | Flour Tortillas | |
Lettuce, shredded | ||
4 | ounces | Sour Cream |
Directions
In a 2-quart saucepan, combine enchilada sauce mix with tomato sauce and water. Bring to a goil, reduce heat and simmer 5 minutes. Set aside.
Brown ground beef in a large skillet. Drain fat. Add * cup of the above sauce to meat and mix well. Add 4 ounces of cheese to meat mixture.
Coat each tortilla with sauce. Spread * cup of sauce in the bottom of 12 x 7* x 2" baking dish. Spoon 3 tbs. meat mixture down center of each tortilla. Fold over tortilla sides to encase meat and place seam-side down in baking dish.
Spoon remaining sauce over enchiladas. Top with * cup Cheddar Cheese. Bake in preheated 350* oven for 15 minutes. Serve hot.
Top with more enchilada sauce, lettuce, and sour cream if desired.
