Field mushroom schnitzel

4 larges Field mushrooms
2 Eggs; lightly beaten
Breadcrumbs or cornflake crumbs
Olive oil for cooking

Directions

Trim stalks and edges of mushrooms so that they are as flat as possible.

Dunk mushrooms in beaten eggs seasoned with a little salt and pepper.

Roll in breadcrumbs, shaking off excess.

Pan fry in olive oil for four or five minutes.
