3 cups Pastry flour
1 cup Shortening or shortening and butter mixture
1 teaspoon Salt

Directions

Directions Measure flour with salt,then sift. Chill. Chill half the fat(if half butter is used,chill it. Cut remaining fat into the flour finely. Sprinkle the flour mixture with cold water, and mix it in lightly, using just enough to make the dough cling together. Roll dough out on a lightly floured board or canvas, to ¼" thickness.

Dot half the cold, hard fat ( which was saved out) over the rolled- out sheet of paste, dust lightl with flour and fold to enclose as much air as possible. Re-roll to ¼" thickness, dot with remaining fat, dust with flour and again fold. Wrap, and chill until required.
