1 | pounds | Mostaccioli or Ziti OR other medium pasta shape, uncooked |
1 | Head broccoli OR cauliflower, cut into small florets | |
1 | tablespoon | Cornstarch |
¼ | cup | Water |
3 | Garlic cloves; minced | |
can | Low-sodium chicken broth (15 1/2-oz. can) | |
10 | ounces | Frozen mixed vegetables |
10 | ounces | Frozen chopped spinach thawed |
Salt and pepper to taste | ||
1 | cup | Grated Parmesan cheese |
Directions
Prepare pasta according to package directions. Three minutes before the pasta is done, stir in the broccoli or cauliflower. Drain pasta and vegetables and transfer to a large bowl.
In a small bowl, dissolve the cornstarch in ¼ cup of water. Put the garlic in a large saucepan with chicken broth. Simmer over medium heat for 3 minutes. Whisk in the cornstarch. Stir in the mixed vegetables and spinach and cook until hot, about 5 minutes. Toss the sauce and vegetables with the pasta, season with salt and pepper and sprinkle with Parmesan cheese and serve.
