Foolproof tart dough

Directions
This recipe can be used for pies, tarts, cheesecake or quiche. It makes a nice flaky shell. Place 1 cup of flour in a bowl with a little salt and 1 tsp sugar. Cut in one stick of cold butter on top and mix until it is the texture of golden meal. If ambient temperature in kitchen is high, then chill flour and bowl in freezer for up to 1 hour. Add 6 Tbs of cold heavy cream (or whipping cream).
Process in food processor until dough forms a ball. Turn out on a board or counter, dust lightly with flour and roll to shape. If in doubt about whether you are using enough flour when rolling out dough, use a lot and brush off excess.
