Fresh nutty rice noodles with egg

Ingredients

Quantity Ingredient
450 grams Rice noodles or vermicelli
1 tablespoon Hoi sin sauce
1 tablespoon Soy sauce
1 teaspoon Ginger wine; (optional)
2 teaspoons Sesame seed oil
2 teaspoons Ordinary vegetable oil
1 teaspoon Chilli sauce
1 teaspoon Sugar
2 tablespoons Sesame seeds
3 Spring onions; chopped very finely
4 Eggs made into omelettes and cut into
; shreds to garnish

Directions

Put the noodles in a large bowl, cover with boiling water and leave to soak for 5 minutes before draining and keeping to one side.

Add the rest of the ingredients, toss and serve hot.
