Fruited wild rice salad

Ingredients

Dressing:
cup Orange juice
¼ cup Olive oil -- or vegetable
Oil
2 tablespoons Honey
Salad
1 cup Wild rice -- uncooked
2 eaches Golden delicious apples --
Chopped
1 each Lemon -- juice from one
1 cup Golden raisins
1 cup Seedless grapes -- red
Halved
2 tablespoons Fresh mint -- minced
2 tablespoons Parsley -- minced
1 teaspoon Chives
1 dash Salt
1 dash Pepper
1 cup Pecan halves

Directions

Combine dressing ingredients; set aside. Cook rice according to package

directions; drain if needed and allow to cool. In a large bowl, toss apples with lemon juice. Add raisins, grapes, mint, parsley, chives and rice. Add dressing and toss. Season with salt and pepper. Cover and chill several hours or overnight. Just before serving, add pecan and toss lightly. Yield: 8-10 servings.
