Fruity ice cream brioche buns

Ingredients

Quantity Ingredient
4 Brioche buns; (very fresh)
4 Scoops ice cream; such as lemon curd
; (* see recipe),
; pistachio or
; strawberry
350 grams Strawberries
3 tablespoons Caster sugar
2 tablespoons Grand Marnier; (or any favourite
; liqueur)
50 grams Shelled pistachio nuts; chopped
Freshly ground or cracked black pepper

Directions

FOR THE FRUIT COMPOTE

1 For the Compote: Roughly chop the strawberries and sprinkle over the sugar and Grand Marnier. Set aside for a few minutes to marinate. Cut the tops of the brioche, hollow them out and spoon in a scoop of the ice cream.

2 Sprinkle the black pepper generously over the strawberries and spoon the strawberries over the ice cream with the juices. Sprinkle over the pistachios and serve at once.
