Gemelli with ricotta and spinach

Ingredients

Quantity Ingredient
16 ounces Gemelli
1 tablespoon Olive oil
2 Cloves garlic; crushed
20 ounces Chopped spinach
1 Carton; (15 oz) skim ricotta cheese
cup Grated Parmesan cheese
¼ tablespoon Coarse ground pepper

Directions

Prepare pasta in boiling salted water. Meanwhile,heat oil in a skillet over medium heat until hot. Add garlic ,stirring for 1 minute. Gradually add spinach and 2 tablespoons of water;cook,stiring often,just until spinach wilts. Remove skillet from heat. When pasta is done, remove 1 cup of pasta cooking liquid, drain pasta ,return to pot. Add ricotta cheese, parmesan cheese, pepper,½ tsp salt,spinach mixture and reserved cooking water.
