Ginger cheese pie (6)

Ingredients

Quantity Ingredient
cup Graham cracker crumbs
¼ cup Butter; melted
11 ounces Cream cheese
¾ cup Sugar
2 Eggs; well beaten
1 tablespoon Freshly grated ginger
1 pint Sour cream
2 tablespoons Chopped preserved ginger; (we always use enough crystallized ginger cut in ca 1/8- to 1/4-inch pieces to amply dot the top)

Directions

Preheat oven to 350 degrees F. Mix crumbs with melted butter and press into 9-inch pie pan. Blend cream cheese with ½ c sugar and the eggs. Beat til smooth. Add grated ginger and pour into prepared crust. Bake 20 minutes.

Mix sour cream with remaining sugar and spread over surface of pie.

Sprinkle with chopped ginger. Return pie to oven with heat turned off for 3-4 minutes. Cool and chill til set.
