Ginger cheese gems

Ingredients

Quantity Ingredient
2 cups Flour, all-purpose
1 tablespoon Baking powder
½ teaspoon Soda
½ teaspoon Salt
½ teaspoon Ginger, ground
1 Egg; well beaten
½ cup Molasses
½ cup Buttermilk
¼ cup Butter (or marg.); melted
1 cup Cheese, Cheddar; shredded
¼ cup Raisins, seedless; or dates

Directions

Combine flour, baking powder, soda, salt, and ginger in large mixing bowl. Mix egg, molasses, and buttermilk together, and add to dry ingredients along with melted butter, shredded chees, and raisins.

Mix only until dry ingredients are moistened. Fill greased muffin pans two-thirds full. Bake at 400 degrees for 12 to 15 minutes.
