Ginger muffins

Ingredients

Quantity Ingredient
½ cup Shortening
½ cup Sugar
1 Egg
1 cup Molasses; light preferably
3 cups All-purpose flour
teaspoon Soda
½ teaspoon Salt
1 teaspoon Cinnamon
1 teaspoon Ginger
½ teaspoon Ground cloves
1 cup Hot water

Directions

Cream together shortening and sugar. Beat in the egg, then the molasses. Sift together the dry ingredients; stir into molasses mixture. Gradually add the hot water, beating until smooth.

Line muffin pans with paper baking cups. Fill ⅔ full. Bake at 350 degrees for 20-25 minutes or till done. Touch lightly with finger - done if it bounces back.
