Gingerbread w lemon curd and candied ginger

Ingredients

Quantity Ingredient
cup Flour
¾ cup Sugar
¾ tablespoon Baking powder
½ tablespoon Baking soda
½ tablespoon Cinnamon
½ tablespoon Ground ginger
1 teaspoon Ground cloves
1 teaspoon Salt
2 Eggs
cup Hot water
cup Molasses
¼ cup Oil
1 Recipe lemon curd; see recipe
Julienned candied ginger; for garnish

Directions

Preheat oven to 350 degrees. Grease and flour a 9-inch by 12-inch baking dish. Sift dry ingredients together into a bowl. Add the wet ingredients and mix until smooth. Pour batter into prepared pan. Bake for 35 to 40 minutes. Remove from oven and let cool.

Serve with Lemon Curd and strips of candied ginger.
