Grandma spakowski's perogi's

Ingredients

4 | larges | Eggs |
1 | cup | Water |
5 | cups | Flour |
2 | teaspoons | Salt |
1 | tablespoon | Oil |
1 | pounds | Farmers Chese |
1 | pounds | Dry curd cottage cheese/ or well drained large curd |
3 | Eggs | |
Salt & pepper to taste | ||
1 | pinch | Sugar to taste |
Drain any canned fruit such as plums, blueberries, rasberries, etc. |

This Recipe is from my Grandma we always make them at Easter time.
Mix All of the ingredients together. Form dough into three balls. Roll out one ball at a time ( about ⅛ inch thick ) Cut into circles about the size of a small tuna can. Put about 1 tablespoon of filling onto a circle, fold in half and pinch sides together.(may need to moisten edges). Drop into boiling water and cook them till they float back up to the surface hen pan nfry them till golden. (I now place them into a covered dish to kind of steam for a bit)
May be frozen or refridgerated
FILLINGS:
Cheese Filling: mix well, chill & fill Fruit: Drain any canned fruit such as plums, blueberries, rasberries, etc.....
