50 | millilitres | Cream |
50 | grams | Sugar |
150 | millilitres | Boiling Water |
25 | millilitres | Sweet Wine |
1 | Lemon; (juice) |
Directions
1. Whisk the egg yolk over a bain marie using the boiling water, until it doubles in volume and is thick and creamy.
2. Fold in the remainder of the ingredients.
3. Glaze under a hot salamander / grill.
4. Serve with sorbet, ice cream or creme fraiche.
