Gratin of summer berries

Ingredients

1 Egg Yolk
100 grams Selection of Berries
1 Vanilla Pod
50 millilitres Cream
50 grams Sugar
150 millilitres Boiling Water
25 millilitres Sweet Wine
1 Lemon; (juice)

Directions

1. Whisk the egg yolk over a bain marie using the boiling water, until it doubles in volume and is thick and creamy.

2. Fold in the remainder of the ingredients.

3. Glaze under a hot salamander / grill.

4. Serve with sorbet, ice cream or creme fraiche.
