Grilled chicken with mint

Ingredients

½ | cup | Lemon juice |
½ | cup | Fresh mint; chopped |
8 | Cloves garlic; minced | |
2 | tablespoons | Olive oil |
½ | teaspoon | Fresh ground black pepper |
1¾ | pounds | Chicken breast halves without skin |
Lettuce leaves; shredded | ||
12 | Pieces skewers; bamboo |
Directions
In a large shallow dish, combine lemon juice, mint, garlic, oil and pepper.
Slice chicken across the grain into ½ inch thick slices. Add to the lemon mixture and toss to coat well. Cover and marinate for at least 1 hour or overnight.
Soak bamboo skewers in water for at least 30 minutes.
Prepare gas or charcoal grill. Thread chicken on skewers and grill about 2½ - 3 minutes on each side.
Serve over shredded lettuce. Garnish with fresh tomato wedges if desired.
