Grilled cornish game hen with chestnuts and cranberries

Ingredients

Quantity Ingredient
4 Cornish game hens (18oz ea)
6 tablespoons Olive oil
Salt and pepper to taste
12 Canned, peeled whole chestnuts
cup Cranberries fresh or frozen

Directions

Brush the hens with 4 tbs of the olive oil and season with salt and pepper. Grill over a hot grill for approximately 7 minutes per side.

If a grill is unavailable, bake the hens in the oven at 450F for 15 minutes. Remove and set aside.

In a skillet over medium-high heat, saut the chestnuts in the remaining 2 tbs olive oil for 2-3 minutes. Add the cranberries and continue to saut for another 2 minutes, until the chestnuts are golden brown. Serve hot.
