Pepper; to taste | ||
1 | quart | Apple cider; or juice |
1 | Cinnamon stick | |
2 | tablespoons | Sweet butter |
2 | tablespoons | Honey |
1 | tablespoon | Dijon-style mustard |
1 | tablespoon | Wine vinegar |

Directions
Preheat oven to 375 degrees F. Wash hens and pat dry..
Season inside and out with salt and pepper. Tie legs together and fold back wings.
For glaze, place cider vinegar with cinnamon stick in a medium saucepan; boil until reduced to 1 cup. Remove cinnamon stick and stir in butter, honey, mustard and vinegar. Boil until thick, syrupy, and translucent.
Place hens in a shallow roasting pan. Brushing occasionally with glaze, cook 55-60 minutes or until golden and tender.
Serve over Wild Rice Mix.
