Harvest pumpkin bars

Ingredients

Quantity Ingredient
1⅔ cup Sugar
1 cup Soy oil
4 Eggs
1 can (16-ounce) solid pumpkin
cup Flour
½ cup Soy flour
1 teaspoon Cinnamon
1 teaspoon Salt
1 teaspoon Soda
2 teaspoons Baking powder

Directions

Preheat oven to 350 degrees. Spray 10 x 15 x 1 inch pan with non-stick spray. In large bowl, combine sugar, eggs and oil. Add pumpkin and mix thoroughly. Combine flours and spices and stir into pumpkin mixture.

Pour batter into prepared pan. Bake for 25-30 minutes, or until tester comes out clean from middle of pan. Yields 24 to 36 bars.
