Hearty beef stew / goulash

Ingredients

2 | pounds | Cut up stew meat |
1 | large | Diced onion |
3 | Carrots 1/2 inch slices; up to 4 | |
1 | pounds | Thickly sliced mushrooms |
2 | tablespoons | Paparika |
1 | teaspoon | Pepper |
¾ | cup | Ketchup |
Oil |
Directions
Brown meat and saute onions in oil. Add seasonings and ketchup and simmer covered over low heat for 1 hour. Add carrots and mushrooms and continue to simmer for 1 hour.
Serve over thick noodles.
