Honey-carrot-date muffins

Ingredients

Quantity Ingredient
¼ cup Butter or margarine
½ cup Honey
½ cup Milk
2 Eggs
cup Flour
1 teaspoon (heaping) baking powder
1 teaspoon Salt
1 cup Grated carrots
1 cup Pitted chopped dates

Directions

Melt butter & honey, stir in eggs & milk & beat. Combine dry ingredients & stir thoroughly. Add to wet mix until just combined, fold in carrots & dates. Bake at 375øF for 15-20 mins. Makes 10 large muffins. Delicious when heated & served with butter, cream cheese or marmalade.
