Hot lotus tea

4 | cups | Water |
½ | teaspoon | Baking soda |
1 | pounds | Lotus seeds |
5 | cups | Water |
1 | cup | Sugar |
2 | Eggs |
Directions
1. Bring water to a boil; stir in baking soda. Then pour over lotus seeds and let stand 5 to 10 minutes.
2. Rub lotus seeds with fingers to husk; rinse and drain.
3. Bring remaining water to a boil; then stir in sugar to dissolve. Add lotus seeds and simmer, covered, 1 hour.
4. Beat eggs lightly. Gradually stir into mixture and remove from heat at once. Serve hot, in small bowls.
