Directions
Cut meat into pieces convenient for serving. Mix salt, pepper and flour; roll meat in mixture to coat. Put a layer of potatoes in a deep dish, then a layer of meat, next onion; repeat until dish is filled, ending with potatoes. Fill dish with water or stock and bake 3 hours at 350F., adding more water if needed. Many of the recipes in this collection did not contain amounts or oven temperatures. I have typed them in as they appear in the book, typos and all.
