Italian plum preserves

Nonstick cooking spray | ||
10 | cups | Italian plums (or similar freestone plums); chopped and quarter |
7 | cups | Sugar |
Juice of 2 lemons |
Directions
Spray the insides of the pot with nonstick cooking spray. Combine plums, sugar, and lemon juice in pot. Over medium-low heat, mix well to combine.
Bring to a boil, reduce heat and simmer, removing foam as it forms. Simmer until thick, about 25-35 minutes ( until 220 degrees) , stirring occaisionally. Ladle into hot sterilized jars to within ⅛-inch of jar top. Place lids on and process in boiling water bath 15 minutes.
NOTES : A very luscious jam. It puts commercial plum jam to shame. Try other plums such as Damson, or a combination of plums, for perfect English muffin spread.
