1 | Chicken, whole | |
¾ | pounds | Ribs, beef or pork |

Description:
This is the main stay of Jamaica cooks Instructions:
Place all the condiments (8) into a blender and puree until it forms a paste.
Rub the paste on to the meat and cover with plastic wrap.
Refrigerate for 24 hrs. Remove the plastic wrap.
Place the meat on the grill in a covered BBQ next to a pan filled with water and roast over low coals for 4 to 5 hours.
Remove meat from grill and let stand for 15 minutes before carving and serving
