Kay baker's fast clam chowder

Ingredients

2 | tablespoons | Butter |
1 | 20-oz can minced clams | |
Pepper to taste | ||
5 | Diced potatoes | |
1 | cup | Onion; chopped |
4 | cups | Water |
2 | teaspoons | Salt |
2 | tablespoons | Cornstarch |
1 | 13-oz can evaporated milk |
Directions
Melt the butter in a saucepan. Add the onions and saute lightly.
Drain the liquid from the canned clams and add to the saucepan, but reserve clam meat. Add the water, salt, pepper, and cornstarch and stir well. Add the potatoes. Cover the pot and cook over low heat 10 minutes. Uncover, and add evaporated milk and clam meat. Cook and stir until mixture simmers. Serve hot.
