Kentucky jam cake caramel icing

Ingredients

2 | cups | Light Brown Sugar |
1 | cup | Granulated Sugar |
¼ | teaspoon | Cream Of Tartar |
¼ | teaspoon | Salt |
4 | Egg Whites |
Directions
1. In a pot or bowl set over simmering water, mix the sugars, cream of tartar, salt and egg whites. Over low heat beat steadily with electric or rotary hand beater until the frosting stands in peaks, no more than 7 mins.
2. Remove from heat and continue beating until thick enough to spread.
3. To assemble Kentucky Jam Cake, place 1 layer of cake on serving plate. Spread on about ½ inch of frosting. Top with another cake layer and more frosting; continuing until fourth layer. Spread remaining icing over top and sides of the cake. Drape the cake loosely with wax paper and set aside at room temp for 1 to 2 days before serving.
