1 | Sprig fresh rosemary | |
2 | Glasses good dry white wine | |
Extra virgin olive oil | ||

Directions
Seal and colour the knuckles in olive oil. Add the garlic and rosemary and cook for two more minutes.
Add the salt, pepper and wine and cover. Cook very gently for one hour or until tender - if they are too dry, then add some stock.
