Layered gazpacho salad

250 | millilitres | Tomato juice; (1/4 pint) |
1 | tablespoon | Red wine vinegar |
2 | Cloves garlic; crushed | |
Freshly ground black pepper | ||
A few drops of Tabasco sauce |
Directions
1. Put the lettuce in a layer in the bottom of the bowl.
2. Slice the tomatoes and arrange them on top, then do the same with the cucumber and finally the peppers.
3. Combine the tomato juice, vinegar and garlic.
4. Season the dressing to taste, and pour over the salad at the last minute.

NOTES : To get the best effect, use a straight-sided glass bowl for this salad, which is a variation on the English summer salad of lettuce, tomato and cucumber. Those who are not on a strict low-fat diet could add a handful of croutons to their portion.
