Leek and ham quiche

1 | each | 9 or 10 in. pastry shell |
½ | pounds | Leeks, white part only (about 2 cups) washed and thinly sliced |
2 | tablespoons | Butter |
1 | cup | Ham, cubed |
¼ | cup | Cheddar or swiss cheese, grated |
3 | eaches | Eggs, beaten |
1¼ | cup | Milk or light cream |
⅛ | teaspoon | Nutmeg |
Salt and pepper to taste |
Directions
Preheat oven to 375 degrees. Saute' leeks in butter until golden brown. Add ham. Place in pastry shell and sprinkle with cheese. Beat together eggs, milk, nutmeg, salt and pepper. Pour over leek and ham mixture. Bake 35 to 45 minutes. SOURCE:*Know Your Onions SHARED BY: Jim Bodle 8/92, 12/94
