Lemon and sage goujons

Ingredients

250 grams Chicken breast; sliced (8oz)
2 Lemons; grated rind and
; juice
1 tablespoon Fresh sage; chopped
2 tablespoons Olive oil
150 grams Dried breadcrumbs; (5oz)
Salt and freshly ground black pepper
4 tablespoons Vegetable oil

Directions

Place the chicken breast pieces into a bowl. Add the lemon rind and juice, sage and olive oil. Stir well and leave to marinate for 20 mintues.

Season the breadcrumbs, place on a plate, then roll the lemon chicken pieces in the breadcrumbs until well coated.

Heat the oil in a large frying pan, fry the goujons for 2-3 minutes on each side until golden brown.

Notes Serve immediately with a salsa dip.
